DEER BURGER TACO DIP

Here's a hearty, gooey dip made with venison burger!  Get out that big heavy iron skillet, brown 2 lbs ground deer burger and onion . Mix in 1/2 bag of Ore Ida hash browns, taco seasoning, chopped jalapeƱo, canned corn. Steam till corn juice absorbs. Option: sprinkle lots of Mexican cheese to melt slightly. Snack style or combine with a spicy venison burrito too , just add guacamole or pico sauce, and sour cream. Scoop with big chips. I love to fry a deerburger burrito for crunchy goodness! WILD TURKEY BREAST

GARDEN SALAD 4-6 oz thin-sliced turkey breast, seasoned, flour optional 1 tsp. olive oil or bacon grease (lightly coat a pan) bowl fresh lettuce, sweet variety Cherry tomatoes or pieces handful of shredded cheddar cheese, carrots  red sweet peppers, julienned dried cranberries walnut pieces Brown turkey slices till golden, dab off grease.  Layer all stuff.  Add salad dressing. GRAMMA'S IRISH CHICKEN POTATO SKILLET DINNER

Spring turkey hunting starting, replace chicken with  wild TURKEY breast!! My Gramma's IRISH CHICKEN POTATO SKILLET DINNER Need small iron skillet,12" iron skillet 2 boneless, skinless chicken breasts 5 large PorteBella raw 'shrooms, sliced 5 small - 4 med. Russet potatoes 1 can cut green beans 1/4c.*olive oil 1t*butter 1 jar chicken gravy  Option: Add Wine or Beer, not water  Rub: 1t seasoned salt, 1/4t black pepper, 1t gr. Rosemary, 1/4t garlic pwdr.  Peel, quarter and slice potatoes 1/2" thick pieces Trim fat off breasts, rinse, pat dry, apply rub both sides.  Saute' 'shrooms in big skillet till butter coated, add beans w/juice and potatoes, simmer.  Heat the oil in small skillet, sear, braise each Breast, gets a brown crust.  Stir veggies, set meat on top, cover, keep high simmer a few minutes. WINTER SQUASH FIGHTS BREAST CANCER

Winter Squash Inhibits Breast Cancer Cells by 96% and Reduces Risk in Women:      Cucurbitacin E, a powerful anti-cancer compound found abundantly in winter squash varieties, was shown to halt the growth of human breast cancer cells by 96% in this study.  But do the  health benefits   of squash extend beyond the lab?  Yes, according to a recent study from the USA, where two servings of winter squash weekly reduced the risk of postmenopausal ER- breast cancer by 30%. FRESHWATER FISH RECIPES

We eat most the fish caught for the sheer love of the taste of fish. The only “catch and release” fish is one that is too small or isn’t within that water’s length limit, returned unharmed to its home. I’m the designated bass cleaner. I soak the fillets in the frig overnight in salted cold water. My husband caught the Channel catfish; they are always cleaned at the water’s edge; same prep. Larger fish are filleted to fit in an iron skillet. I prefer not dealing with bones. The dark belly meat is also fried, fed to my dogs w/o bones.  7 lb Blue catfish CATFISH   BASS  FRESHWATER FISH  Bass fillets Four  2 oz. fillets per serving Cooking oil Large skillet Paper towel Tongs or long spatula COATING 2 Cups finely crushed Corn Flakes or pkg of FishFry mix 1 Cup seasoned flour sprinkle of paprika Layer paper towels on a pan next to the stove Pour oil into skillet to half cover fish Pat dry fillets, drop in an empty bread bag “shake
