DEER BURGER TACO DIP

Here's a hearty, gooey dip made with venison burger!  Get out that big heavy iron skillet, brown 2 lbs ground deer burger and onion . Mix in 1/2 bag of Ore Ida hash browns, taco seasoning, chopped jalapeƱo, canned corn. Steam till corn juice absorbs. Option: sprinkle lots of Mexican cheese to melt slightly. Snack style or combine with a spicy venison burrito too , just add guacamole or pico sauce, and sour cream. Scoop with big chips. I love to fry a deerburger burrito for crunchy goodness! DEER BURGER SUMMER TACO SALAD

I fixed this recipe more than 20 years ago for the kiddos and it remains a favorite especially on hot summer days. I cook the beef early in the morning. Sometimes even chop all of the ingredients then, too, so all I have to do is throw everything together when it is time for dinner. Teenagers especially love this this super easy salad when the tummies rumble. INGREDIENTS SERVINGS 8-10 1 lb ground DEER BURGER 1 (1 1/4 ounce) envelope taco seasoning mix) 1 head iceberg lettuce, chopped 3 roma tomatoes, diced or fresh cherry tomatoes, quantity to suit 6 green onions, chopped 1 (15 ounce) can red kidney beans or 1 (15 ounce) can black beans, drained 1 (15 ounce) can  black olives, sliced 1 cup cheddar cheese, shredded 1 (16 ounce) bottle Catalina dressing 1 (14 1/2 ounce) bag plain Doritos, crumbled into big chunks DIRECTIONS Brown deer burger, mix taco seasoning and apx. ¼ cup water to dissolve seasoning, simmer. FRESHWATER FISH RECIPES

We eat most the fish caught for the sheer love of the taste of fish. The only “catch and release” fish is one that is too small or isn’t within that water’s length limit, returned unharmed to its home. I’m the designated bass cleaner. I soak the fillets in the frig overnight in salted cold water. My husband caught the Channel catfish; they are always cleaned at the water’s edge; same prep. Larger fish are filleted to fit in an iron skillet. I prefer not dealing with bones. The dark belly meat is also fried, fed to my dogs w/o bones.  7 lb Blue catfish CATFISH   BASS  FRESHWATER FISH  Bass fillets Four  2 oz. fillets per serving Cooking oil Large skillet Paper towel Tongs or long spatula COATING 2 Cups finely crushed Corn Flakes or pkg of FishFry mix 1 Cup seasoned flour sprinkle of paprika Layer paper towels on a pan next to the stove Pour oil into skillet to half cover fish Pat dry fillets, drop in an empty bread bag “shake

VENISON FAJITAS with Bean and Cheese Dip

VENISON FAJITAS MEAT MIXTURE One lb. thin-sliced LOIN or ROAST venison 1/2 cup chopped or sliced onion several small or 1/2 bag qt. red and yellow peppers 1/2 tsp. Kosher or table salt 1 tsp cayenne pepper or chile powder shake of black pepper  1/2 tsp garlic powder  OR  1/4 crushed garlic clove  OR 1 tsp minced garlic a dribble of cooking oil 2 large flour tortillas Thick salsa (enough for 2 servings) sour cream handful of sharp cheddar cheese additional_ options  : jalapeno peppers, black olives, pepperjack cheese, guacamole dip   Use Wild Turkey breast as a healthy  venison alternative.                                    HOW-TO : Julienne-slice the venison and peppers chop onion Add oil into heating WOK, add the meat just before it starts to smoke, then all spices.
