DEER BURGER RECIPES

STUFFED GREEN PEPPERSFresh green peppers and deerburger easy meal.   We all like the gooey melted cheese and bacon!

     

2 LBS. GROUND DEER BURGER
1/2 ONION
2 EGGS
1 CUP CRUSHED CRACKERS OR DRIED BREAD CUBES
1 CUP COARSELY CHOPPED PORTABELLA MUSHROOMS
4 BACON SLICES
4 SLICES SWISS OR PROVOLONE CHEESE
4 LARGE GREEN BELL PEPPERS
SALT and PEPPER
GARLIC POWDER

Mix burger, onion, crackers, eggs and seasoning in large bowl with fork, then mush thoroughly with hands.  Set aside.

Cut off pepper stems, remove seeds, rinse.

Cook bacon half done, tear in half.  Save drippings.*



Brush bacon drippings on bottom of a baking dish (I prefer a 2 qt casserole dish), fill the peppers 1/2 full with meat mixture.  Next layer mushrooms, bacon and cheese.  (Layer cheese first if you prefer gooey, as in the photo below).  Shake garlic on top.

Bake at 350 degrees 30-40 minutes till cheese is golden bubbly.  Let rest five minutes.

*Deer burger has no fat unless you add it in your processing.  Brush the bacon drippings on the baking dish to keep the peppers from sticking and to add flavor,   Use cooking spray if you want no calories.

     



Use Pepper Jack cheese for a kick or Mozzarella for a mellow Italian flavor. 







DEER BURGER MEATLOAF


2 lbs ground deer burger
2 eggs
1 C. croutons, crushed crackers or seasoned stuffing mix
1/4 C. tomato sauce
1/4 medium size onion, chopped
big dash salt and pepper
1 t. @ ground rosemary and thyme
1/2 t. pwd. garlic or 1 t. minced
drizzle of ketchup

Hand mix all ingredients in large bowl, except ketchup.
Apply cooking spray to large iron skillet and heat.
Press meat mixture into skillet, drizzle ketchup over meat, cover with lid.

Cook on MED heat ( it will burn the bottom on HIGH heat) keep covered apx. 15 minutes
This recipe also fills a loaf pan for baking apx. 30 minutes
Serves 4
Serve this hearty entree' with noodles or mashed potatoes and a salad.
